This very limited production EVOO is made from our estate Tuscan varieties and named for our owner. Each harvest season on one cool early morning, Gregg asks the harvest team to rush a load of olives to our mill within 45 minutes of picking. This incredibly quick time from tree to crush results in a extremely smooth and creamy EVOO that is low in bitterness. It's a fast-paced morning for everyone, but worth the effort!
